How can I make black text print using only black ink?

Try setting black as a Spot Color, selecting Black from the '#Spot' List.

If you have applied image smoothing, this can interfere with the Spot Color tolerances. Either increase the tolerance used for the Spot Color, or turn image smoothing off.


What is the best way to match a sampled color with the Spot Color output?

From the ColorTUNE window, the Print Samples wizard (launched from within the 'Options' section) allows you to print out a full range of color swatches based on your Printer/Ink/Media combination. These color swatches can be used to reliably match physical samples to printed output.
